Molten Chocolate Muffins - a delicious treat for Mum this Mother's Day

These gorgeous molten chocolate muffins are simple to bake and completely delicious - the ideal treat for Mum this Mother's Day.
Molten Chocolate Muffins
For the perfect results, bake in a Siemens oven on the CircoTherm setting with added steam at 180C for 8-10mins.
140g/5oz Unsalted Butter
140g/5oz Plain Chocolate - broken into pieces
140g/5oz Caster Sugar
100ml /¼pt Very Hot Water
140g/5oz Self-Raising Flour
30g/1oz Cocoa Powder
Icing Sugar - to dust
Preheat your oven to 180C
Melt the butter and chocolate in a pan on the hob until liquid, then take the pan off the heat and stir in the very hot water and caster sugar
Sieve the flour and cocoa powder into the mixture, then beat in the eggs, taking care they don't scramble
Transfer the mix to a muffin tin lined with paper cases, ensuring each muffin is the same size
Place the muffin tin in the oven on any shelf - if using a Siemens oven add steam at the medium level
Set your oven timer for 9 minutes then allow to bake
To check the muffins are cooked press the top gently - the crust should feel firm
Dust with icing sugar and serve immediately so they remain gooey and molten!
Give one to Mum with a cuppa (or even better a glass of Prosecco!) and ENJOY!
